Spaghetti Sauce
½ lb. hamburger
3 T. flour
1 small can tomato sauce
1 16 oz. stewed tomatoes
½ cup water
1 T. parsley
¼ tsp. oregano
¼ tsp. basil
½ tsp. onion powder
½ tsp. garlic
½ tsp. Italian seasoning
Brown hamburger and drain. Stir in flour. Add remaining ingredients and simmer over low heat for 30 minutes. Salt and pepper to taste. Serve over spaghetti.

Cheesy Broccoli Soup
1 ½ cups milk
¾ lb. Velveeta Cheese
1 10oz. package frozen chopped broccoli
Cook broccoli according to package directions. In a sauce pan, melt cheese and milk. Add broccoli, salt and black pepper. Serve with toasted bread and chicken salad.

Vegetable Beef Soup
1 ½ lb. beef shank
1 1-pint 2oz. can tomato juice
1/3 cup chopped onion
4 tsp. salt
1 cup sliced carrots
2 tsp. Worcestershire sauce
¼ tsp. Chili powder
2 bay leaves
6 cups water
1 1-lb. can tomatoes
1 cup diced celery
1 8 & ¾ oz. can corn
1 cup diced potatoes
1 10oz. package green beans
Combine meat, tomato juice, onion, seasonings and water. Cover and simmer 2 hours. Cut meat from bones; strain broth and skim off excess fat. Add meat and vegetables; cover and simmer 1 hour. Serves 8.

Meatloaf
1 lb. ground beef
a small amount of garlic salt
2 eggs
¾ cup oatmeal
1 small onion
1 T. Worcestershire sauce
Catsup – to make moist
A squeeze of mustard
Pepper
Mix well. Bake at 350? until done (about 30-45 minutes). Serves 4.

Cornbread just in case you forget how to make cornbread
¾ cup cornmeal
1 egg
1 T. warmed shortening
Enough milk to mix Heat oven to 400?. Preheat muffin pan with shortening in it. Combine ingredients in bowl and stir. Add hot shortening and stir. Pour batter into muffin pan and cook until lightly browned.

Favorite Hot Cocoa
¼ cup Hershey’s Cocoa
½ cup sugar
salt
1/3 cup hot water
1 quart milk
¾ teaspoon vanilla
Combine cocoa, sugar and a dash of salt in a saucepan; blend in water. Bring to boil over medium heat, stirring constantly; boil and stir 2 minutes. Add milk; stir and heat. Do not boil. Remove from heat; add vanilla. Beat with rotary beater until foamy. Makes about 6 6oz. servings.

Doritos Casserole
1 lb. ground beef
2 cans cream of chicken
1 can refried beans
1 jar taco sauce (mild or medium), large size
1 can chopped green chilies, small
l bag Doritos
Grated Cheese
Preheat oven to 350?. Fry ground beef and drain. Add next 4 ingredients and heat. Crush Doritos and place in bottom of 9’’ and 13’’ pan. Cover with ground beef mix and heat in the oven for about 20 minutes. Top with cheese and return to oven until cheese melts. Serve with a salad and bread.

Nana’s Chocolate Cream Pie
9’’ Baked Pie Shell
1/3 cup Hershy Cocoa
1 ¼ cup sugar
1/3 cup cornstarch
¼ tsp. salt
3 cups milk
3 T. butter
1 ½ tsp. vanilla
Sweetened whipped cream Prepare shell according to the package; cool. Combine cocoa, sugar, cornstarch and salt; blend in milk until smooth. Cook and stir over medium heat to boil; boil and stir 3 minutes. Remove from heat; blend in butter and vanilla. Pour into shell; press plastic wrap onto surface. Chill 3-4 hours. Serve with sweetened whipped cream.

Seven Layer Salad
1 head lettuce
1 to 2 medium onions, sliced and ringed
1 can sweet peas
4 to 6 boiled eggs, shredded
1 package cheddar cheese, shredded
1 jar bacon bits
3 to 4 T. Blue Cheese salad dressing
Layer as listed above beginning with lettuce in a large glass dish. Top with slices of bell pepper. Keep in refrigerator until time to serve. Prepare night before meal. Will keep up to 4 days.

Chicken Pot Pie In a bowl, place and stir:
2 cans cream of chicken soup
2 cans veg-all, drained
2 cans chicken (broken up), not drained
Some Celery Seeds
Line pie pan with bottom crust. Put mixture in and cover with top crust. Seal sides. Bake at 350? for 45-60 minutes. Serves 4.

Moravian Tea Cakes
½ cup butter, softened
1 cup sugar
3 eggs
1 ½ tsp. vanilla extract
½ teaspoon lemon extract
3 cups all-purpose flour
2 tsp. baking powder
½ tsp. salt
¾ tsp. ground nutmeg
Cream butter in a large mixing bowl; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Stir in vanilla and lemon extract. Sift together flour, baking power, salt and nutmeg in a separate container. Gradually add creamed mixture stirring well. Roll dough to 1/8 inch thickness on a heavily floured surface; cut with assorted 2-inch cutters. Place 2 inches apart on lightly greased cookie sheets. Bake at 350? for 8 minutes or until lightly browned. Remove to wire racks to cool. Store in airtight containers. Yields about 5 ½ dozen.

Sweet Potato Casserole
3 cups cooked mashed potatoes
½ cup sugar
2 eggs, beaten
½ teaspoon salt
¼ cup margarine, melted
½ cup milk
1 ½ tsp. vanilla extract
½ cup firmly packed brown sugar
1/3 cup all purpose flour
1 cup chopped nuts
3 T. margarine, melted
Combine potatoes, sugar, eggs, salt, ¼ cup margarine, milk and vanilla. Spoon into a greased baking dish (use spray). Combine brown sugar, flour, nuts and 3 tablespoons margarine in separate container; spread mixture over sweet potato mixture. Bake at 350? for 35 minutes. Serves 8.

Cheese Ball
2 8oz. packages cream cheese
1 small can crushed pineapple, drained
1 T. seasoning salt
1 T. minced onion
¼ cup chopped green pepper
1 ½ cup chopped pecans
Use ¾ cup of pecans to mix and save remaining nuts to roll ball in.

Applesauce Spice Muffins
1 cup butter or margarine, softened
2 cups sugar
2 eggs
2 cups applesauce
4 cups all-purpose flour
2 tsp. baking soda
1 tsp. salt
1 T. ground cinnamon
2 tsp. ground allspice
½ tsp. ground cloves
1 cup chopped pecans
Powdered Sugar
Cream butter; gradually add sugar, beating well at the medium speed of an electric mixer. Add eggs, on at a time, beating after each addition. Add applesauce, mixing well. Combine flour and next 5 ingredients; add to creamed mixture, mixing well. Stir in pecans. Fill greased miniature (1 ¾ in) muffin pans about ¾ full. Bake at 350? for 14 minutes or until done. Transfer to wire racks; sprinkle with powdered sugar. Yields 7 dozen. Batter will keep in frig for 2 weeks.

Jug Pickles (per gallon)
1 cup pickling salt
2 T. Alum
2 T. Pickling Spice
1 tsp. Tumeric
9 cups sugar
1 gallon (10-11 whole) cucumbers
Slice cucumbers in jug and cover with salt water. Let stand for 4 days; shake daily. Leaving cucumbers in jug, wash 3 times then cover with alum and let stand for 24 hours. Drain and rinse 3 times, then cover with apple cider vinegar and let stand 7 days. Drain vinegar, add spices and 3 cups of sugar for 3 days. Shake several times daily until sugar dissolves. Save some vinegar in case you need to cover pickles. Tie spices in cheesecloth.

Snickerdoodles
3 cups All-purpose flour
2 tsp. cream of tartar
1 tsp. baking soda
½ tsp. salt
1 ½ cups sugar
½ cup butter, softened
½ cup shortening
2 eggs
1 tsp. vanilla
3 T. sugar
1 T. cinnamon
Preheat oven to 400? and lightly grease baking sheets. Combine flour, butter and shortening. Beat in eggs and vanilla. Stir in flour mixture just until blended. Combine 3 T. sugar and 1 T. cinnamon in a small bowl. Shape dough into 1 inch balls and roll in cinnamon-sugar mixture. Bake 7-9 minutes. Center of cookie will be soft. Makes about 6 dozen.

Cowboy Cookies
1 cup white sugar
1 cup brown sugar
2 eggs
1 cup shortening or ½ cup oil and ½ cup butter
2 cups sifted flower
½ tsp. salt
1 tsp. soda
½ tsp. baking powder
2 cups quick oats
1 tsp. vanilla
1 6oz. package semi-sweet chocolate chips
Mix sugar, eggs and shortening together and then add remaining ingredients. Add 1 cup chopped nuts if desired. Drop by teaspoon on a greased cookie sheet. Bake at 350? for 12 to 15 minutes.

Broccoli Salad
4 to 5 cups of broccoli, heads only, chopped
1 cup rasins
¼ cup chopped red onion
10 strips bacon, fried and crumbled

1 cup sunflower seeds (optional)
½ to 1 cup cheese, shredded
Dressing:
3 T. sugar
½ cup mayonnaise
1 T. vinegar
Mix all ingredients. Just before serving, pour dressing over salad.

Sausage Balls
1 lb. Sausage, uncooked
3 cups Bisquick
6 to 8oz. (¾ to 1 cup) sharp grated cheddar cheese, room temperature
Mix well; roll into balls. Bake 15 minutes at 450?.
